INGREDIENTS:
2 whole chicken breasts
¼ cup flour
½ tsp salt
½ tsp white pepper
Dash cayenne pepper
2 tbsp butter
2 tbsp canola oil
4 shallots, minced
1 tbsp parsley, minced
¼ cup bourbon
8 button mushrooms, halved
Salt and pepper, to taste
DIRECTIONS:
1. Cut chicken breasts in half; place in a paper bag with flour, both peppers, and salt. Shake well, then tap off excess flour.
2. In a heavy saucepan heat the butter and oil. Sauté the chicken until lightly browned on both sides.
Add shallots and parsley. Sauté two minutes.
3. Add the bourbon. Carefully step back and set aflame. Shake until dowsed, about 10 seconds.
Add mushrooms. Cover pan and simmer 12 to 15 minutes until chicken is done. Season to taste with salt and pepper.
